The Story Behind Red Moon BBQ’s Santa Maria–Style Cooking
At Red Moon BBQ, we don’t just cater food — we bring a time-honored BBQ tradition to every event we serve.
Our cooking is inspired by Santa Maria–style BBQ, a Central California tradition known for bold flavor, simple seasoning, and cooking over a real wood fire. It’s a style built around community, quality ingredients, and the kind of meals that bring people together.

What Is Santa Maria–Style BBQ?
Santa Maria Style barbecue is a 150-year old Central Coast tradition that started in the 1800s in Santa Maria Valley, when local ranchers would host barbecue feasts for their vaqueros — or cowboys — as well as family, friends and neighbors. The meal consists of grilled beef, usually tri-tip or sirloin, that is seasoned with a simple mix of salt, pepper and garlic, and grilled over native red oak coals.
Instead of heavy sauces or complicated rubs, the focus is on:
